Amarula Malva Pudding

20150211_124822(0)_resizedMalva Pudding with cream sauce is a traditional favorite in South Africa and this recipe has the added touch of South Africa’s favorite liqueur as well.  Amarula is a smooth, creamy liqueur exported around the world. The combination of flavors  results in a mouth watering finish to any meal.

Accessories:  Plastic bowl and cookie whips
Quantity: 8 x 8 pan or 9 inch round pan
Preheat oven to 375 degrees

Pudding Ingredients:

  • 1 egg
  • 1 cup sugar
  • 1 tbsp. apricot jam
  • 2 tbsp. softened butter
  • 1 cup flour
  • 1 tsp baking soda
  • pinch of salt
  • 1 cup milk
  • 1 tsp vinegar

Sauce Ingredients:

  • 1/2 cup butter
  • 3/4 cup cream (plus 1/3 cup if not using amarula)
  • 1/2 cup sugar
  • 1/3 cup Amarula Liqueur

Add egg and sugar to bowl and whip together till creamy, add jam and sugar stirring till combined.  Add flour, baking soda and salt.  Mix well on medium speed. Slowly pour in the milk.  When combined add the vinegar and whip a bit more.  Pour into greased baking baking dish,  cover with foil and bake for 40 minutes. Remove foil and bake for another 10 minutes or till golden.

To make the sauce: combine butter, cream and sugar in a sauce pan and heat bringing to boil till it thickens.  This will take a few minutes, stir continually.   Remove from stove and add the Amarula.  Slowly pour about 1/3 of the sauce over the pudding as soon as it comes out of the oven. Serve while still warm by setting a slice of pudding on sauce of pour sauce over before serving.  With Valentines just days away, a little added garnish of thinned Raspberry Jelly turns a simple dessert into a little something special.
