Angel Nests

20160320_130614_resized As always at Easter I like to put up a recipe that kids will enjoy helping to make or enjoy eating.  These will offer both.  Fun little bird nests and of course they need eggs. Eggies and Peeps are at the top of most treat lists at this time of year so adding them just makes it more fun. A little lighter fair than most Easter baking these with  Homemade Angelfood Cake but still a sweet treat.

Accessories:  Plastic Bowl with Balloon Whips
Makes 12 nests
Preheat oven to 350 degrees

Ingredients:

  • 5 room temp egg whites
  • 3/4 tsp cream of tartar
  • ppinch of salt
  • 2/3 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup sifted flour

For glaze you will need

  • 2 cups icing sugar
  • 4 or 5 tbsp. water or milk
  • 1 cup toasted coconut

Beat the egg whites till just starting to hold their shape start with low speed and once a bit firm turn up to about 6 oclock. on the dial then add the cream of tartar and salt.  Slowly by the tbsp. add the sugar into the eggs and continue beating another 30 seconds or so to ensure the sugar dissolves.  Turn speed to the lowest point possible and gently, slowly add the flour. As soon as all is mixed in stop the mixer.  Spoon into greased mini donut tins (if not donut pan can also pour into thin layer on a small cookie sheet and use a donut cutter after baked).    Bake for about 12 minutes till golden and come away from edges. While they are baking mix together your glaze ingredients, you want this to be quite thin so just get a slight bit gets on donuts or you will not be able to handle them.  Remove the baked donuts from oven and gently remove from mold by running a tbsp. around the edges.  Cool.  Once cooled dip the donuts (they will be very gentle to handle) about 3/4 way down into the glaze, allow to drip a bit and dip into the toasted coconut.  To toast coconut you can place it in the oven but I prefer to do mine in a small skillet on the stove stirring continually till just slightly browned.  After they have set decorate with a couple Eggies and if you like decorate the plate as I have done by dying a bit of coconut green and adding a few Peeps.  Instead of an extra plate to tote I placed mine on a Tupperware pie saver lid for easy transport and that way they were Kid safe.  easy to cover and ready to transport for our Easter celebration .   Enjoy and Happy Easter everyone.
