Breakfast Cookies

breakfast cookies (800x450) Yes you can have cookies for breakfast.  Excite you youngsters this camp season by baking these Breakfast Cookies before your trip.  Great for kids that can’t wait to start the day or the early riser fishermen that wants something ”to go”.

Accessories: Ankarsrum Original with Stainless Bowl and Roller/scraper
Quantity: 3 dozen
Preheat oven: 375 degrees

Ingredients:

  • 1 cup milk
  • 1/4 cup butter
  • 1/2 tsp. salt
  • 1 cup flour (used fresh ground)
  • 1/2 tsp. baking powder
  • 4 eggs
  • 1 cup coarsely grated Cheddar cheese
  • 4 slices cooked bacon, coarsely chopped
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped sundried tomatoes (optional)
  • ¼ teaspoon ground black pepper
  • 1/4 tsp cayenne pepper

Melt butter and add to milk. Add eggs and beat well.  Slowly add the flour and baking powder then blend well at medium speed.  Once blended  add the remaining ingredients.  Mix well and drop by tsp. onto parchment lined cookie sheet.  Bake for 25  minutes or till edges are golden.  Great served warm or freeze or freeze and save for that quick breakfast on the go.
