Nothing beats a warm cup of hot chocolate after time outdoors in Saskatchewan during January. If you need a little warm up but don’t enjoy the sweetness of store bought hot cocoa mix this may be a recipe you enjoy.
Accessories: Ankarsrum Mixer with blender attachment
Quantity: Almost 2 cups mix enough for 8 – 10 cups of cocoa
Ingredients:
- 1/2 – 2/3 cup brown sugar ( according to taste)
- 2 tsp corn starch
- 3 oz semi-sweet or dark chocolate (coarsely chopped)
- 1/2 cup baking cocoa
- 1/4 tsp vanilla
- 1/8 tsp fine sea salt
Combine all ingredients but the grated chocolate in the blender till well mixed. Add the grated chocolate and mix till powder. To make Hot Chocolate heat milk till steamy. Add 2 heaped Tbsp per cup of cocoa ( I use 5 tbsp. per 2 cups) . Simmer for a minute or 2 till chocolate is melted and creamy. Enjoy as is or top with a few marshmallows or whipping cream to sweeten. Store in air tight container at room temperature for up to 2 months. Remember this is Hot Chocolate not Hot Cocoa and will be a stronger flavor.
