Lentil Bars

Great tasting and and nutritious. This is a scrumptious bar that is gluten free plus as delicious as nutritious. Trust me it will satisfy you when you are begging for that sinful treat.  Individually wrapped they make a great snack on the go. A great recipe that utilizes several Ankarsrum attachments.

Accessories:  Ankarsrum  Plastic Bowl with cookie whips and the Flaker Attachment or KoMo Flaker if desiring fresh rolled oats. You can also grind the almonds with the grater attachment for Meat grinder if you like.
Baking Equipment: 8 x 8 pan and plastic wrap or parchment paper

Ingredients:

  • 1 cup Peanut Butter
  • 3/4 cup Honey
  • 2 tbsp. Coconut oil
  • 1/2 cup Chocolate chips
  • 1 tbsp. Cocoa Powder
  • 1/2 cup Almond Flour
  • 3 cups precooked Lentils
  • 1/4 cup ground Flax
  • 1/4 cup Hemp Seeds
  • 1/4 cup Sunflower Seeds
  • 1/2 cup Raisins
  • 1 cup rolled oats

For lentils rinse and cook till just soft approx. 10 minutes and cool. Lentils approx. double in size when cooking so will need about 1 1/2 cups dry lentils.

Mix peanut butter and honey over low heat till it starts to thicken nicely then add the coconut oil, chocolate chips and cocoa.  Blend till all is melted. Add remaining ingredients and mix well.  Pour into lined 8 x 8 pan and place in freezer approx. 3 hours till set. Remove and cut into squares.  Store in fridge or freezer.
