February is Heart Health Month in Canada so I plan to add a few heart friendly recipes this month. My first is a favorite snack of mine when I have the munchies but know better than to grab processed goodies from the pantry.
For best flavour fresh flake your oats. YOu can use the Flaker attachment for your Ankarsrum Mixer of a KoMO Flaker. I have both and tried a bit with both with excellent results from either. The KoMo Flakers can be purchased stand alone or as a unity with a grain mill check the KOMO page of our website for the various models available.
Accessories: Ankarsrum mixer with 3.5 L Plastic Bowl and Flaker
Quantity: 3 dozen small cookie balls
Ingredients:
- 1 cup fresh flaked oats or steel cut oats
- 1/4 cup coconut oil
- 1/2 cup peanut butter
- 1/3 cup honey
- 1/2 cup ground flax seeds
- 1/2 cup mini chocolate chips
- 1/2 cup raisins
- 1 tbsp. hemp seed
- 1 tbsp. sesame seeds
- 1 tsp. vanilla extract
mix together the liquid ingredients, add the oatmeal and slowly add the remaining ingredients. Mix together on a low speed till well blended. Place bowl in refrigerator for 1/2 hour to chill slightly. Take out and roll into small balls. Chill about 1 hr. to set before serving. These freeze real nice keeping shape when thawed.
