Sour Dough Baguettes

Ankarsrum Bagettes

These are a delicious baguette.  Simple to make for even first time sourdough bakers.  Great dipped in you favourite oils or as shown enjoy them with a Taco salad. Nice with a fresh pot of soup as well. These need to be left to rise in fridge overnight or here I mixed in the morning and made fresh for an evening meal. This is one of a wonderful new collection of recipes that is soon to be included with all new Assistents.  If you have an Assistent and would like the recipes please email us at info@jalyns.ca and we will email you a copy of the complete collection. You will need prepared sourdough starter for this recipe.  You can find recipes in many books to make it or it is available though some health food stores and bakeries as well. One is also included with the new set of Assistent recipes.

Use dough hook

  • 2 cups warm water
  • 2 tsp yeast
  • 1 cup sourdough starter
  • 4 cups white flour
  • 1 tbsp sea salt

Dissolve yeast in warm water add the sourdough and flour. Knead on low speed for 13 minutes. Add the salt and knead on a slightly higher speed for an additional 7 minutes. Grease sides of bowl and let rise at room temperature for 60 minutes. Then place in fridge overnight.  Heat oven to 450 degrees.  Carefully place dough on flat surface and divide into 4 - 6 pieces depending on desired size. Shape into desired size rolls and slash with harp knife if desired.. Place baguettes in oven. After 5 minutes in oven reduce temp to 400 degrees. Bake for a total of 30 minutes or until the are golden brown.  Cool and enjoy.
