Are you ready for Super Bowl Sunday?

Looking for something to serve at the Superbowl party?  With a little preplanning these will be a hit.  You will need some active sourdough starter. You can find many recipes for this or it can be purchased in nutrition and health food stores. Even some bakeries will sell you a bit to get you started.  If you want to start your own this will take a few days to a week or more depending on your method.

Use Roller and Scraper

  • 2 cups of sourdough culture  ( thick pancake batter consistency)
  • 2 Tbsp. Olive oil
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • 1/2 cup water
  • 3 cups all purpose flour
  • baking soda, 6 cups water for boiling later
  • Course salt for tops

Mix all but flour together then add the flour, adjust flour as need for a fairly thick  dough consistency. Knead for 8 minutes at about 3 o’clock on you dial until dough  is shiny and smooth.  Divide the dough into approx 20 balls and roll each ball into a 14 inch rope. Loop and twist into a pretzel.  Allow to rise four 1 hr in warm place.  Place a pot of boiling water on the stove and add the baking soda.   Carefully drop a few pretzels into the water and simmer briefly,turning once. Remove from water with a slotted spoon and drain on paper towel or cloth.  Once drained place on a baking pan and sprinkle with Course Salt. Slit with sharp knife or razor blade several times if desired.  Bake in preheated 425 degree oven for about 30 minutes until browned.  Cool on rack.
