I think this is my second or third version of a Shortbread cookie. But I believe the Ankarsrum Assistent makes better shortbread than any other mixer I have ever tried. Once again a recipe that just melts in your mouth. I made a double batch using the Roller and scraper.
- 1 cup icing sugar
- 2 cups flour
- 2 tbsp. Almond liqueur or 2 tsp almond extract
- 1/2 cup diced candied cherries
- 1/2 cup chopped almonds
- 1 1/4 cup cold butter grated
Mix together the dry ingredients then add fruit, nuts and liqueur. Once well blended sprinkle the grated butter over and blend in gently. Note that the roller and scraper do not cut butter so it is important to grate finely. shape into a ball and refrigerate for one hour. Roll out and cut with heart shaped cutter rerolling scraps till all is used. Make about 4 dozen small cookies.
