Carrot Zucchini Apple Bread

I was planning on doing an Apple or Zucchini recipe this week and when I came across this I knew it was perfect.  It’s a sweet bread that goes great as dessert or with your morning coffee.  Half a loaf was devoured by my son before it even cooled so to me that’s a thumbs up for this recipe.

 

Accessories: KoMo Mill, Ankarsrum stainless bowl with Roller and the Vegetable Slicer attachment, I used the large and medium grater blades.
Quantity: 2   4 x 8 loaves
Preheat: Oven to 350 degrees

 

 

 

Ingredients:

  • 1 cup butter
  • 2 cups sugar
  • 3 eggs
  • 1/4 cup orange juice
  • 1 tbsp. vanilla
  • 3 1/4 cups flour (fresh ground best)
  • 1/2 tsp salt
  • 2 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1 tbsp. cinnamon
  • pinch of cloves
  • pinch of nutmeg
  • 2 cups grated carrots (used medium blade)
  • 1 1/2 cup grated zucchini (used medium blade)
  • 1 1/2  cup grated apple (used large blade)
  • 1/2 cup chopped walnuts

Grease and flour  your loaf tins.  Blend sugar, egg,butter, orange juice and vanilla together.  Add flour and remaining dry ingredients.  Mix at about 4 o’clock on dial till well mixed.  Gently fold in grated ingredients and nuts on low speed.   Pour into prepared tins and bake for approx. 50 minutes or till golden brown and tooth pick comes out clean when testing.  Can frost with your favorite Cream Cheese frosting or serve with a dollop of butter.  Freezes well.
