Chocolate Cake (with whiskey marinated blueberries)

A Swedish Specialty as they celebrated Fathers Day but I am sure most fathers would enjoy this anyday.  Bake it up in a special Bundt pan to make it even more eye catching.  Let dad sit back and enjoy with a coffee.

Use the Ankarsrum with Plastic Bowl and cookie whisks
Preheat oven to 350 degrees


  • - 3 eggs
  • 225 g sugar
  • 120 g brown sugar
  • 300 g salted butter
  • 200 ml milk
  • 360 g flour
  • 60 g cocoa
  • ½ tsp salt
  • 3 tsp baking powder
  • 100 g blueberries (frozen)
  • 2 tbsp Whisky 

-This recipe works well in a 2 1/2 L bundt pan.
-Soak  blueberries and whiskey in a glass and place in the fridge for 2 hours.
-  Grease  bundt pan with butter and  sprinkle to cover with a mixer of equal flour and cocoa 
-add eggs and sugar and beat on medium speed until batter is very airy and light, 5-8 minutes.
- melt the butter and mix it with the milk and add to the batter.
- slowly add the flour, cacao, baking powder and salt. 
-spoon 1/3 of the batter into the bundt pan.
-spoon the soaked berries over this and then cover with the remaining batter
- bake for 35-45 minutes. 9.
-remove as soon as a tests dry with toothpick

Allow to cool and then serve with whipped cream.
