These are sooooo….. good. Nice and soft and yummy. When I made these I had no intension of posting this recipe so forgive me for not including more pictures.
Accessories: Ankarsrum with Stainless bowl and roller/scraper
Quantity: 4 dozen cookies
Preheat oven to: 375 degrees
Ingredients for cookies:
- 3/4 cup softened butter
- 1 cup packed brown sugar
- 1 egg
- 1 tsp vanilla
- 2 1/2 cups flour
- 1 tsp cinnamon
- 1/2 tsp baking powder
- pinch of salt
Filling:
- 3 tbsp. brown sugar
- 3 tbsp. softened butter
- 1 1/2 tsp cinnamon
Beat together the butter, sugar, egg and vanilla. Slowly add the dry ingredients. Blend together for about 2 minutes and refrigerate for 1 or 2 hrs.. Let stand at room temperature just till soft enough to roll out. Divide in half. Roll each into a 12 x 10 rectangle. Spread each with half of the filling. Carefully roll up again and chill once again until firm (approx. 30 minutes). Slice into thin slices and carefully place onto a parchment lined cookie sheet. Bake about 10 minutes or till golden on the edges. Cool on racks and enjoy fresh or freeze for later.
