A delicious relish that I have been making for years. A fall staple my sons wait for yearly. Great with burgers, franks or add to a sandwich. This is easy to do with the Grinder attachment. I use the 8 mm disc to keep it chunkier. Speed about medium and rapidly feed down chute into Assistent lid or another bowl.
- 4 Large carrots
- 20 Large cucumbers roughly peeled and seeded
- 3 onions
- 1 red pepper
- 1/2 jalapeno pepper (optional)
Put through grinder and sprinkle with salt and let stand overnight. Drain WELL
Cook brine of:
- 4 1/2 cups white sugar
- 4 cups vinegar
- 3/4 tsp. Turmeric
- 1/2 cup flour
- 1/2 tsp celery seed
- 1/2 tsp. ginger
Bring brine to boil and add drained vegetables. Return to a boil. Put in hot jars and seal. I often double this recipe and it turned out fine. As pictures show I forgot to seed the first few cukes may not look quite as nice but still tastes great!
