Jelly Roll

A little creativity turns an ordinary jelly roll into a simple Valentines treat.

Use: Beaters or cookie whip with small bowl.  Preheat oven to 400F

  • 1 cup flour
  • 1 cup sugar
  • 1 tsp. baking powder
  • 5 eggs
  • 1 tsp. vanilla

Filling:

  • 1 1/2 cup whipping cream
  • 1 tsp. vanilla
  • 1/4 cup icing sugar
  • 3/4 cup Raspberry jam.

Beat eggs till frothy.  Add remaining ingredients.  Spread onto cookie sheet and back for 15 minutes or till done. Sprinkle icing sugar onto a sheet of parchment paper. Gently turn warm jelly roll onto paper and roll up into traditional shape or for this Valentines version I folded in the long sides to give the heart effect. Roll a towel around to help hold shape.  Once cool gently unroll and fill.

To fill, spread thinly with a hazelnut/chocolate spread such as Nutella.  Whip cream till stiff, gently blend in the remaining ingredients. Spread evenly over chocolate cream and reroll.  Place in freezer for 1/2 hr to allow for easy slicing.
