The first time I was offered Onion Salad I though hmmm…. and tried it to be polite but was pleasantly surprise. It is a delicious treat that goes with anything. I’ve even put it in a wrap and enjoyed it that way as a light (but messy) lunch. So whether you eat it as a side or as part of the main course you will enjoy this refreshing twist on onions.
Use the Vegetable Slicer with slicing blade.
- 5 cups sliced onions
- 1/2 cup water
- 1/2 cup vinegar
- 3/4 cup sugar
- 2 tsp. salt
Mix together and let stand for 3 hours. Then drain, reserving half of the brine. To that add:
- 1/2 cup salad dressing
- 1/2 cup sour cream
- 3 tbsp. sugar
- 1 1/2 Tbsp. vinegar
- 2 tsp. celery seed
Let stand for at least 2 hours or overnight in fridge. Serve. This keeps in fridge for up to a week.
