TOMATO AND ONION BRUSHETTA

A great addition to your appetizer table.

My favorite time of year is fast approaching..tomato season!!!  This is a delicious easy to make brushetta.  Especially good with the fresh herbs and tomatoes from my garden. If using boughten as always freshest is best even if they cost a bit more. Though the brushetta is not made with the Assistent hopefully your favorite baguette or french bread recipe is the base to which your brushetta is served.

  • 4 plump tomatoes
  • 2 cups onions  ( sauteed slightly to mellow the flavor)
  • 3 Tbsp. Olive Oil
  • 2 Tbsp fresh Oregano
  • 2 Tbsp fresh Basil
  • 2 Tbsp frsh Parsley
  • 1 clove garlic ( adjust to taste)
  • dash of salt and pepper
  • 1/2 cup Parmesan Cheese

Chop tomatoes and onion to desired size.  Saute onions in tbsp on olive oil add tomatoes and remaining oil and blend. Finely chop the herbs and add to vegetables. That's it so simple and so good.

Preheat oven to 400 degrees. Slice baguette or bread of choice thickly and brush one side with olive oil.  Place on pan toast till slightly browned.  Flip and place brushetta on slices and sprinkle with parmesan, return to oven and bake till bottoms are browned and tops are melted.  This will take about 6 – 8 minutes. Cool slightly and enjoy.
