This was simply delish and sounds more complicated than it was. I mixed the dough at home and then put in a cooler and did the rest at the lake the next day. Worked great!

Makes 2 loaves
Preheat BBQ to 400 degrees
Ingredients for Bread:
- 1 1/2 cups water
- 2 tbsp. sugar
- 2 tbsp. olive oil
- 1 tsp. salt
- 1 tbsp. instant yeast
- 4 cups flour
Filling
- 2 cups cooked shredded chicken
- 2 medium onions
- 1 1/4 cups BBQ sauce (your favorite)
- 1/4 cups honey mustard
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
For bread mix together the water, oil, sugar and salt on low speed. Once blended add about 1 1/2 cups of the flour and mix well. Add the yeast and then the remaining flour to make a soft dough. Adjust the flour according to what you are using. I used all fresh ground and used just slightly more. Knead at about 4 o’clock for 8 minutes and allow to rise till double in bulk, let rise again and then proceed to the next step. Since I wanted to bake this at the lake I moved to another sealable bowl and head camping:-) Once there I placed the bowl in fridge till next day.
To make the filling while the dough is rising or when wanting to prepare, slice the onions and sauté in a tbsp. of olive oil till soft and slightly golden. Add the shredded chicken, BBQ Sauce and honey mustard. Sauté another few minutes to allow flavors to blend, cool.
To prepare the loaf. Remove from fridge if was chilled and allow to return to room temperature, knead and allow to rise again till double. Divide dough in half. For each half roll out into about a 16 x 9 rectangle. Slice in the sided of the dough about a third of the way across from both sides allowing the center 3 inches alone to place the filling on. Once this is done place the filling in the middle and top with the cheese. After this simply criss cross the strips to form a braid ensuring that each strip is firmly stick to the dough on the other side. Tuck ends under and squeeze to prevent filling for dripping.
o bake preheat BBQ to 375 degrees. The best would be to use thin fire bricks to place pan on but as you can see in photos I improvised and it worked great. I placed 2 overturned Cast iron pans on bottom rack and the loaf onto a well greased sheet of tinfoil and placed this on the top rack. Worked superb!
This is so good and really easy to make. While we enjoyed the first loaf I baked the second and placed in the freezer for another day or better yet a great appetizer while enjoying the company of friends another lake day.
