Blueberry Bran 100 Cal Muffins

Happy New Year everyone, with that comes the fact we have to admit Santas elves haven’t shrunk our clothes we just enjoyed all the delicious holiday food a bit to much.  I have a recipe here to help on you way back to feeling good in those jeans.  These muffins come in at about 100 calories per muffin for a nice filling snack or breakfast on the go.

 

 

Accessories:  Ankarsrum Mixer with Plastic Bowl and single whips
Quantity: 12 muffins
Preheat oven to 375 degrees

Ingredients

  • 1 1/2 cup wheat bran
  • 1 cup low fat milk
  • 1/2 cup applesauce
  • 1 egg
  • 2/3 cup brown sugar
  • 1/2 tsp vanilla extract
  • 1 cup whole grain flour (fresh is best)
  • 1 tsp baking powder
  • 1 tsp baking soda
  •  1/2 tsp salt
  • 1 cup blueberries

Mix together the bran and milk in your bowl and let sit for about 10 minutes while you gather the remaining ingredients. Then add the applesauce and egg. Mix together again with speed at about 3 on your dial just till well mixed.  Add dry ingredients, folding in slowly with speed dial as slow as it goes.  Once you have everything folded in gently add the berries just till mixed in.   Spoon into 12 lined or greased muffin tins and bake 12 – 15 minutes till golden and done.   Best ate fresh but also freezes well.    I substituted Saskatoon berries I had picked over the summer and froze  instead of blueberries as the recipe calls for.
