Blueberry Maple Coffee Cake

Surprise your co-workers with fresh cake tomorrow.  A delicious treat with Blueberries, or use the berries of your choice. It’s equally as tasty with Saskatoons, Raspberries or even Rhubarb.

Use the 3.5 litre bowl with cookie whips.

Mix 2 cups fresh or frozen berries with 1/4 cup maple sugar and set aside

Cake Batter

  • 1/2 cup butter
  • 1/4 cup sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt

Topping:

  • 1/4 cup butter
  • 1/2 tsp. cinnamon
  • 1 cup Maple Sugar

In a small bowl combine topping ingredients to add later.

In the 3.5 litre bowl combine butter, sugar, egg and mix at medium speed till light and fluffy.  Add vanilla and sour cream and blend together.  Add the flour, baking soda, baking powder and salt.  Mix together at low speed.  Pour 2/3  of this mixture into greased 9″ spring form or bundt pan.  Top with blueberries and spread remaining cake mixture over this.  Sprinkle with topping and bake at 350F for 1 hour or till done.
