Take boring out of dinner buns…
Delicious right from the oven or nice along side a pot of hot chili. You can either bake this in a tube pan or split between 2 foil pans as we did here. I had a wonderful helper in the kitchen today and this allowed her to take a sample home to her family.
Use the roller and scraper.
- 1 cup warm milk
- 1 cup warm water
- 3 tbsp oil (I used olive)
- 2 tsp. salt
- 1 tbsp. sugar
- 2 1/2 tsp instant yeast
- 6 cups flour
- 2 cups sharp cheddar cheese
- 1/2 cup melted butter and 1 1/2 cup grated parmesan cheese (for rolling in)
Place milk, water, oil, salt and sugar in stainless bowl and blend. Add about 1/3 of the flour then the yeast. Continue to blend at low speed. Add the remaining flour but adjust flour as needed to get a soft dough which releases from roller easily but is not dry. Allow this to blend on low for a minute then while turning sprinkle the cheese on top. Once slightly mixed in turn up the speed to about 3 oclock n dial. Knead for 6 – 8 minutes, add a couple minutes more if you choose to use whole wheat flour. Shape into ball, cover with lid and allow to rise for 30 minutes.
Cut dough into 32 – 36 pieces and shape each into a ball. Dip each ball into melted butter and then roll in the grated parmesan. Layer in your pan/pans. Cover once again and allow to rise till double about 1 hr. Bake in 375 degree oven on low rack for 20 – 35 minutes till golden brown, this will depend on pans being used. Cool in pan 5 – 10 minutes then remove. Delicious and smell absolutely wonderful while baking.
