Chocolate Banana Bread

- This is a quick easy to make banana bread. Not being a chocolate lover I found the chocolate over powering and will likely cut the chocolate back next time. My banana bread loving son thought it was delicious just as it is. So adjust according to your likes. Peanut butter is a great finishing touch if desired. This is an adaptation from a similar recipe on www.kraftrecipes.com .
Accessories: Ankarsrum mixer with plastic bowl and single whips
Quantity: 1 loaf (9 x 5)
Oven: Preheat to 350 degrees
- 1 egg
- 1/2 cup Miracle Whip Dressing
- 3 fully ripe bananas
- 1 1/2 cup flour
- 1 cup sugar
- 1 tsp baking soda
- 1 tsp salt
- 4 squares melted semi sweet chocolate (or less)
Preheat oven. In small bowl add egg, banana broken into small pieces, Miracle Whip and sugar. Blend on low till bananas are mushed.. Mix in remaining ingredients except chocolate. Do not over beat.
Melt chocolate. Pour 1/2 half the batter into a small bowl and add chocolate to whats remaining in the mixer bowl. Blend gently but do not over beat. Spoon batters alternately into greased loaf pan and then gently swirl with a knife.
Bake 1 hr or till toothpick inserted comes out clean. I baked about 55 minutes. Cool in pan 10 minutes and remove to wire rack till cool. This can easily be made a head or can freeze for later.
