Chocolate Pecan Bars

  • Great Lunch Kit Snack

A great snack for lunches on the go. Makes a large batch so enjoy some now and freeze the rest for later. Use the plastic bowl and cookie whips for both the base and later to mix the topping. Preheat oven to 350 degrees.

Base:
  •  1cup butter
  • 3 cups flour
  • 1/2 cup sugar

Beat butter and add the sugar and flour until it resembles course crumbs. Press into a 15 x 10 cookie sheet sprayed.  Bake 15 minutes till lightly browned.

Topping: 

  • 6 squares unsweeetend chocolate
  • 1 1/2 cupcorn syrup

While that is melting beat together, blend to gether in the small bowl

  • 4 eggs
  • 1 1/2 cup sugar
  • 1 1/2 tsp vanilla
  • 1 1/2 cups chopped pecans
  • 1 cup coconut

Mix this together and then add the melted chocolate slowly. Spread over warm base and return to oven for another 25 minutes or till it is firm around the edges but still soft in center.

Cool completely and drizzle with 2 melted squares of white chocolate.  Slice and enjoy.
