These cookies are a little twist on Oatmeal Cookies. This recipe has Rice Krispies to give them some Snap, Crackle, Pop:-) Or at least a bit of crackle. I also added Chocolate Chips to half of the batch to satisfy a chocolate lover.
Accessories: KoMo Flaker & Mill to roll oats and grind grain (if fresh desired)
Ankarsrum with the Roller Scraper attachment
Quantity: 4 dozen cookies
Preheat oven to 375 degrees
Ingredients:
- 1 1/2 cups margarine or butter (softened)
- 3 eggs
- 3 cups brown sugar
- 1 1/2 tsp vanilla
- 3 cups flour
- 3/4 tsp salt
- 1 1/2 tsp baking powder
- 3 cups Rice Krispies
- 1 1/2 cups coconut
- 3 cups Oatmeal
- 1 cup chocolate chips (optional) or raisins would be great too.
Cream butter, eggs, sugar and vanilla till smooth and fluffy with speed dial at about 5 o’clock. Add the flour mix on low speed till well blended then stir in the oats, coconut, Rice Krispies and Choc Chips (optional) whip at 5 o’clock for about 30 seconds. Drop by tsp. onto cookie sheet and bake approx. 12 minutes till just golden edges but still soft. Enjoy some now and freeze the rest for another day. This was a great coffee dunker with coffee on the deck this morning.
