Cucumber Avocado Salad

This is a really great salad that can almost be a meal by itself and only takes 20 minutes from start to eating. Great for summer as can be made ahead to take along, keeps about 24 hrs.

Equipment: Ankarsrum Mixer with Vegetable Slicer

Quantity: Approx. 5 cups of salad

Ingredients:

  • 1 long large English Cucumber
  • 1 cup grape or cherry tomatoes quartered
  • 1 avocado
  • 1/2 can rinsed chickpeas
  • 1/4 cup diced red onion
  • 1/3 cup feta cheese
  • 1 tbsp chopped fresh dill
  • 1 tbsp chopped fresh parsley
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Sea salt to taste
  • Pepper to taste

    

 Quarter the Cucumber almost to the end lengthwise and place in vegetable cutter shoot and slice. Can also chop the avocado and onion the same way if you like. Whisk together the lemon juice and olive oil. Place all other ingredients in a bowl, drizzle with the oil lemon juice mixer. Serve immediately or cover and refrigerate till later.
