Dark Chocolate Truffles

2016-02-11 16.37.07_resizedYes this is supposed to be a healthy month…but it is Valentines and Family Weekend here, so I tried to find a recipe that would satisfy  that Chocolate desire that is tradition with Valentines and still be enjoyed by the whole family (less the wine).

Accessories: Meat mincer attachment with grater end.
Quantity:  about 24 small Truffles

Ingredients For Orange Truffles

  • 5 oz grated dark chocolate
  • 2 tbsp. coconut oil
  • 1/2 cup coconut milk
  • 1/2 tsp vanilla
  • 2 tbsp. orange juice (fresh)
  • 1 tsp orange zest
  • cocoa powder for rolling in

Ingredients for Spiked Pecan Truffles

  • 5 oz grated dark chocolate
  • 2 tbsp. coconut oil
  • 1/2 cup coconut milk
  • 1/2 tsp vanilla
  • 2 tbsp. Spiced Whiskey
  • 1/2 cup grated pecans for rolling in

For each recipe I placed all the ingredients other than coconut milk and rolling ingredients into a 2 cup measuring cup.   Heat the coconut milk till simmering.  Pour over ingredients in measuring cup and blend in, slowly the chocolate mixture will melt with the milk.  Once all the chocolate is melted.   Place containers in fridge for about 6 hrs. or overnight till firm.  I actually placed the one with Whiskey in freezer for about 45 minutes to harden a bit more.  Remove one container at a time and quickly shape into small balls and dip into the cocoa for the Orange Truffles and into Grated pecans for the Spiked Truffles. Store in fridge.  The original Spiked recipe called for Bourbon which I did not have but thought the subtle blend of flavors in Spiced Whiskey would be perfect and it is!   ENJOY and Happy Valentines Day everyone.
On another note the grater attachment for the Meat Mincer works excellent for fine grating of the pecans and chocolate.  This grater is also excellent for hard cheeses such as parmesan.
