Why not let your kids get rid of some of their extra Easter energy by getting them to smash some Mini-eggs. Here’s a quick Easter treat to share if you get an unexpected coffee guest drop by.
Accessories: Stainless Bowl with Roller/scraper, KoMo Mill for fresh flour
Quantity: 9 x 13 pan
Preheat: 350 degrees
Ingredients:
- 2/3 cup Margarine
- 2 cups Brown Sugar
- 2 Eggs
- 1 tsp. Vanilla
- 1/4 tsp. Baking Soda
- 1 tsp. Baking Powder
- 2 cups Flour (I used fresh ground)
- 1/4 tsp. Salt
- 2 cups Cadbury Mini Eggs (smashed)
This is a simple quick bake similar to Brownies but no cocoa added. Firstly find some volunteer kids and a couple meat tenderizing mallets. Place Mini eggs into a strong plastic bag and let them smash away.
Place margarine, eggs, sugar and vanilla into Stainless bowl and move arm just slightly away from wall turn speed to about 4 o’clock and let this whip. At first margarine will stick to roller but it will incorporate within about 30 seconds. Blend till smooth and add Flour, salt, Baking soda and Baking powder. Blend slow till mixed then increase speed till fluffy add about 1 1/2 cups of the crushed Mini Eggs. Mix. Spread into a greased pan. Sprinkle the remaining eggs over top. Bake for 25 minutes or until edges are browned slightly, do not over bake. Cool in pan and cut into squares. Enjoy or freeze for another day.
