Grammas Sour Cream Cupcakes

Looking for a fun activity with some little ones that are excited about Easter. This cupcake recipe is delicious and if you are fortunate to have a couple darling little ones of your own or in my case a couple visiting helpers this is a great way to spend a bit of time with them as they create some ”Hatching Chicks” just in time for Easter.
Use Plastic bowl and cookie whips:
- 2 large eggs
- 1 cup granulated sugar
- 3/4 cup butter, softened
- 3/4 cup sour cream
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Preheat oven to 350 degrees. Mix together the egg, sugar and butter till light and fluffy at about medium speed. Add the sour cream and vanilla. Mix on low till well blended then increase speed for 30 seconds. Add the flour, baking powder and salt blend together till smooth.
Divide batter among 12 white cupcake liners and bake 13 minutes or until toothpick inserted comes out clean. Remove from oven and cool on rack.
While cupcakes are baking mix up your favorite butter icing. If wanting to decorate as above, make your frosting quite thick. To about 1/3 add yellow food coloring until desired shade. Decorate with mini chips or bits of chocolate and decorating bits to look like chicks if desired for the Easter season.
