I Want to Marry You Cookies

 No idea where this name came from but it caught my attention enough to check out the recipe. I love serving traditional Christmas baking this time of year but sometimes the simple recipes disappear the fastest. This is a new recipe for me and I am sure these cookies will disappear long before the Christmas Fruitcake:-)  Credit to www.cookingchanneltv.com for the recipe. 

  • Equipment: Ankarsrum Mixer with the roller and scraper attachment
  • Preheat oven to 325 degrees F
  • Makes 3 dozen cookies (I made a double batch for 6 dozen)

Ingredients:

  •  1 cup butter
  • 1 1/4 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 2 cups flour
  • 1 cup uncooked rolled oats (if you have the flaker attachment even better if fresh flaked..yummy nut flavor)
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1 cup white chocolate chips
  • 1 cup chocolate chips

    

Melt the butter and add the brown sugar and sugar to the dish and chill for 30 minutes.  Place this mixture into your stainless bowl and add the egg, egg yolk and vanilla. Mix well at about 3 o'clock and while on low speed about 2 o'clock add the flour, oats, soda, salt and cinnamon. Once this is all incorporated slowly pour in the chips till mixed in well. Roll into small balls and chill for 30 minutes.   If in a cold climate and no worries about cats and other critters you can cut this chilling time by placing outside, or do like I did and enjoy the outdoors for a bit and steer the critters away from your trays. Place the chilled cookies into a preheated oven for about 12 minutes, do not over bake.  Enjoy some now and freeze the rest for Christmas.
