Lemon Buns

  A delicious treat for leisurely morning coffee over the holidays. 

Use the Roller and scraper

  • 3/4 cup margerine
  • 4 eggs
  • 3 1/2 cups scald milk
  • 1 cup warm water
  • 1 1/4 cup sugar
  • 4 Tbsp yeast instant yeast
  • 4 tsp. salt
  • 1/2 tsp nutmeg
  • 10 – 12 cups white flour

Mix together margarine, eggs sugar, milk and water. Blend in 1/3 of the flour and yeast.  Add salt and remaining flour to make a soft dough. Let rise till double and work down one more time.  Form into buns.  Make a hole and fill with pie filling of choice, here I used some cherry, apple and of course the favourite lemon. For lemon filling mix about 1/2 cup butter into lemon filling this will prevent it from cracking while baking.. Bake at 375 degrees for about 20 minutes or till golden.  Drizzle lightly with frosting when cool.  Makes about 3 – 4 dozen buns.  Can make ahead and freeze for holidays.
