If ever at Costco and sampled their Aussie Bites and loved them you will love these too as they taste a whole lot like them and are healthy to boot. I played around with a couple recipes and eventually came up with this… healthy and good. A couple of these will fill you for a snack or pair with some yogurt and fruit to make a great breakfast.

I ground and flaked my Oats with KoMo products. I have the KoMO XL Grain mill and the FlicFloc Flaker as shown above but if you are looking to purchase I suggest a Combination Mill/Flaker, the KoMo Fidifloc 21 (shown below) is a great mill/flaker combination if usually baking small batches of bread or not needing large quantities of flour at once, there are many options available by clicking on the KoMo tab above. Many times we have had customers purchasing a mill and later regretting not purchasing the combination unit as that little flaker is great… fresh porridge (the best!!), granola, cracking poppy seeds and flax are just a few examples of what can be done with it.
Quantity: 48 mni muffins
Preheat oven to 350 degrees
Ingredients:
- 1/2 cup pitted dates
- 1/2 cup dried apricots
- 2 cups fresh ground oat flour
Mix the above ingredients together in a blender of food processor to chop the fruit up - 1 3/4 cup fresh flaked oats
- 1/3 cup raisins
- 2 tbsp honey
- 2 tbsp coconut sugar1
- tbsp sunflower seeds
- 1/4 cup ground flax seeds
- 1 tbsp coconut
- 1 tbsp chia seeds
- pinch of salt
- 1 1/2 tsp baking soda
- 1/4 cup cooked quinoa
- 1/4 cup soft butter
- 1/4 cup apple sauce
- 1 slightly beaten egg (optional but less crumbly if added)
In the Plastic Ankarsrum Bowl add the flour/fruit mixer and add remaining dry ingredients. Add quinoa,butter, apple sauce and egg. Mix together and dump by spoonful into slightly greased muffin tin and press down gently. Bake for 10 minutes. Enjoy….if not wanting them all now, these freeze nice too.
