Orange Pineapple Muffins

A delicious way to start your day or a wonderful snack.

Use the Stainless Bowl with roller and Scraper. Could use the cookie whips as well but will find that fruit bits cling to whips as well a gentler mix makes for lighter muffins. Preheat oven to 350 degrees. Makes 12 muffins.

  •  1 1/2 cup whole wheat flour
  • 1 1/2 tsp. Baking Soda
  • 1/4 tsp. salt
  • 3 tbsp. ground flax (fresh best as adds a touch of nuttiness)
  • 1/2 cup sugar
  • 1 egg
  • 2 tbsp. Canola Oil
  • 1 cup finely chopped fresh pineapple
  • zest of 1/2 orange
  • 2 oranges

In stainless bowl , mix together the dry ingredients. Remove from base and flip Assistent on side to add Blender.  Place the peeled oranges into the blender and turn on at a low speed for about 15 seconds just to coarsely puree.  Add the egg, pineapple and zest. Mix for about 5 seconds and then pour into the dry ingredients return to base and mix together gently with dial at about 2 o'clock for approx 30 seconds till just blended.  Pour into  muffin tins sprayed with oil and bake for about 25 minutes.
