Peanut Butter Cookies

Simple, delicious and a great freeze ahead recipe. I love recipes that let me preprep and these cookies do. The photos will show a double batch.

Equipment: Ankarsrum with roller and scraper  Preheat oven: to 350 degrees                      Makes about 24 cookies per batch

Ingredients:

  • 1 cup room temperature butter. Margarine makes good cookies butter makes great ones!
  • 1 cup crunchy peanut butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt

  • Whip butter and peanut butter together with speed at about 6 o'clock. Lower speed and add sugars and eggs. Once incorporated increase speed again and whip for 1 minute. Lower speed and add flour, baking powder and salt. Beat another minute. Cover and refrigerate for 1 hr. Remove, shape into balls, place on prepared cookie sheet and press with a fork. Bake in 350 degrees for 10 minutes.  With about half the dough I shaped into logs to freeze for another day. To bake, thaw just enough to slice. Place on prepared cookie sheet and allow to thaw another 20 minutes or so make lightly with a fork and bake as above.
