Rhubarb has to be one of the favorites around this time or year. I like to bake up a batch of these in foil pans. By baking in foil it makes a delicious summer treat that is easy to take with you to a friends BBQ or for a trip to the lake.
- 4 cups chopped rhubarb
- 3/4 cup sugar
- 2 Tbsp. flour
Toss these together in a microwavable bowl for 6 minutes on high, stirring after about 3 minutes. While this is cooking mix together the crumble topping.
TOPPING: (Use roller and scraper)
- 1 1/2 cup oat flakes freshly rolled with your Assistent Oat Flaker or use store bought steel cut flakes
- 1 cup flour
- 1/2 cup softened margarine
- 3/4 cup brown sugar
- 1 tsp cinnamon
Mix together at medium speed in your Assistent till well blended.
Place cooked rhubarb in 9 inch pie plate, top with crumbles and bake in 350 degree oven for 20 minutes or until filling starts to bubble and topping browns slightly. Delicious served with ice cream or a dollop of whipped cream.
