Scalloped Ham and Potatoes Supreme

Here’s a bit of winter comfort food. Add a fresh salad and you’ve got a great meal.  Meat, potatoes and vegies.  Quick, easy and delicious plus only one dish to clean!!

 

 

Accessories: Ankarsrum Base with the Vegetable slicer
Quantity: 2 Quart Casserole
Preheat oven to 350 degrees

Ingredients:

  • 2 cups Ham chopped
  • 4 cups sliced potatoes
  • 1 medium onion
  • 2 cups green beans
  • 1 box stove top stuffing
  • 1 cup grated cheddar cheese
  • 1 cup warm water

Sauce Ingredients:

  • 2 cups milk
  • 1/4 cup butter
  • 1/4 cup flour
  • salt and pepper to taste

Grease a 2 quart casserole dish well, including the lid or if no lid spray tin foil to cover with.  With the vegetable attachment using the slicing blade slice the potatoes and onion. Switch to a shredding blade and shred your cheese. Now layer into the casserole dish in this order….Ham, potatoes, onions and green beans.

In a microwavable bowl put the milk, butter and flour.   Microwave on high for 2 minutes.  Remove and blend with a whisk.   If butter not yet melted return for a bit longer.   Add salt and pepper to taste.  Careful with the salt as the ham is already quite salty.  Pour this sauce over the layered ham and vegetables.

Mix the stove top stuffing with a cup of water till saturated and spread across the casserole then sprinkle with cheese.  Cover and bake for about 1 hr.  Remove lid and bake another 30 minutes or until potatoes are soft when poked.  Enjoy…..
