What a great treat when you need a easy treat. With Christmas just around the bend these are a great starter for the season and freeze well to save for the holidays if you can keep them hid till then. I admit to labelling ice cream pails of baking as “Zucchini” to keep my boys from snitching from the freezer.
To make these use the Plastic bowl and cookie whips.
- 4 cups rolled oats
- 1 1/4 cup granulated sugar
- 1/2 cup cocoa powder
- 1 cup margarine
- 3/4 tsp. instant coffee mixed in 1 tbsp. hot water
- 1 tsp vanilla
- 1 oz square unsweetened chocolate grated fine
- Coconut approx 1/2 cup for rolling
Mix together the first 4 ingredients till well blended then add the coffee, vanilla and chocolate. Mix till blended. Shape into small balls and roll in dish of coconut. Refrigerate for 2 hours to firm, package and store in fridge or freeze till needed
